What I accomplished 1/6/2016
- Sat and slowly ate my breakfast, complete with a cup and saucer for my coffee. It was very dainty and relaxing.
- Aaron and I watched a course for SSFU! We're a bit farther behind than I thought we were. We watched Lesson #3 instead of 5.
Food Journal 1/6/2016
Breakfast:
- Yogurt
- Banana
- Coffee with cream
Lunch:
- Sausage burrito
Dinner:
Chicken and broccoli from Meals Made Simple- Beef yakisoba with onions and bell peppers
Observations
- Our steak tacos only stretched through dinner Tuesday night, so I didn't have any leftovers to take to work. I was planning on grabbing a microwave bean and cheese burrito...but they've removed that cooler from the break room at work. The only items left are sandwich type items.
- I was finally able to find a sausage burrito, but it was not chalk-full of goodness.
- It frustrates me that my meals are sometimes an afterthought. I know what happens when I don't eat well, and yet, I don't treat eating well as a high priority 100% of the time. Eating well deserves to be planned out.
- This was an exhausting day. Way too many distractions, people asking me dumb questions and too much for me to do. I struggle to focus on days like this, as well as stay positive. I also question whether I'm actually positively impacting the business when the majority of my day is spent on minutia.
- Our recipe for Chicken and broccoli totally bombed. We used liquid aminos instead of coconut aminos. Way too salty! We ended up getting takeout instead.
Fixes
- Think of emergency meal workarounds
- Bulk soups made on the weekend, packaged and ready to grab from the freezer in the mornings?
- If the soup is yummy, that would be a great workaround.
- Single serving leftovers packaged and ready to grab from the freezer for when we make too much and get tired of a meal?
- Salad with whatever protein may be leftover in the fridge?
- Start packing lunch the night before so that if I need to stop at the store for a healthier meal, I can leave early in the morning.
- I'll test out a few of these and report back.
- I spoke with my mom about this food issue and she recommended Well Fed. I'll get it from the library and see if I want to buy it after! She says it mixes basic spices and ingredients. I shy away from complex recipes because I get frustrated paying $45 for ingredients and then taking two hours to make a fancy meal. That's no way to live every day! I like Kevin's approach to food - keeping it as simple as possible. The hangup we run into is not know what to cook/getting stuck in a rut.
- Buy coconut aminos instead of liquid.
